Described HPLC ion chromatography method enables to measure the nitrate content of brewing water and bottled beer. The accuracy of this method has been verified by comparison with photometric Postel's and flow injection methods. High values of correlation coefficients in extent 0.9794 to 0.9992 and other statistics has confirmed high agreement of results of all three methods. Compared with other used methods for nitrate measurement HPLC ion chromatography is considerably faster, easier to perform, more specific and enables high reproducibility of results. Analytical monitoring of nitrate contens of brewing waters and boottled beers in the east bohemian region has shown that only in two breweries were found values over 50 mg/l. About 50 % of breweries have shown nitrate content less than 25 mg/l.
