Research works of effects due to the presence of foreign matters in melting barley, malt and beer.Peer-reviewed article

G. ONDRÍŠEKOVÁ, V. SEĎOVÁ

From the start of research works on the problem: ,,Effects of chlorinated insecticides present in barley and other products used in brewing industry", i. e. from 1977, altogether 74 samples of malting barley, malt, sweet wort, hopped wort and beer have been analyzed. The results are compared to limits specified in regulations for DDT and its metabolites and also for HCH. It has been established that roughly 4 % of the total amount of applied chlorinated insecticides present in barley is transferred to beer. In the next stage of research works several barley growing districts will be selected for systematic analyses of residual chlorinated insecticides in barley and for evaluating fluctuation of their concentrations in longer periods. For higher accuracy new analytic methods will be introduced. Concentrations of residual chlorinated insecticides must be duly controlled in beer to keep them within limits specified in binding regulations for food products. Also in exported malt their concentration must be reduced to minimum to comply with the requirements of foreign customers.
