The study evaluates selected parameters of grain and malt of new accessions from the Collection of Genetic Resources of Spring Barley maintained at the Agricultural Research Institute Kroměříž, Ltd. over 2003-2005. The results of evaluation of 113 varieties from differentiated regions of the origin confirmed the highest malting quality of the set of varieties from Western and Central Europe with orientation to the selection of materials with high content of fermentable substances. In 2007 following spring barley malting varieties were registered: Aksamit, Beatrix, Blaník, Poet, Spilka, and Westminster. The varieties Aksamit and Blaník (82.7%; 82.9%) provided malts with very good extract content, for their reduced activity of proteolytic enzymes they were classified as the varieties suitable for production of Czech Beer. The article deals with technological moments of the malt production in the specific conditions of Velké Březno brewery, a member of the Drinks Union brewing group, with respect to the value of Relative Extract. During the 2005/2006 campaign, several malting procedures aiming at increasing the level of malt modification were tested. The assumption that it will lead to increased values of Relative Extract has been confirmed. Phenology is the branch of science that studies mutual relationship between climate and weather and between every year repeated development of living organisms that pass through clearly defined stages, called phenological phases. In territory of Czech Republic phenological observations have long tradition. This article assesses observations of five selected phases of spring barley - sowing, emergence, second node, heading and fully ripe - which were made in period 1985-2003 in five localities representing various conditions which the barley is grown in. The ideotype of spring malting barley is based on the propsal of Czechoslovak breeders. The propsal of the barley ideotype reflected requirements of the Ministry of Agriculture and Nutrition and it resulted from the state of breeding in the given period and it considered prospective intensive use of barley for high grain yields and malting quality.
